Grain Free Chicken Stir Fry

Y’all!!  Why have I waited so long to jump on the riced cauliflower train?!

Oh yeah.  Because I did it once myself and then drowned my frustrations and scraped knuckles (from the grater thingy) in a bottle of wine after.  Seriously.  Such a mess and crazy dangerous!

Fast forward a year and I’m stocking up on frozen veggies and see this!!  I opened the freezer door, grabbed it, read the ingredients, looked around like I just found the Holy Grail and someone was going to snatch it from me, and hid it in my basket.

This stuff is amazing!!!  Ahhhhmazing!!!  And I love that my belly doesn’t look 5 months pregnant after eating it, like it does with rice.  Delicious + no food baby = awesomeness.

Here’s how it went down….

Ingredients:
2 chicken breasts
1 package of the yummy goodness of riced cauliflower medley (Found in the frozen section with the veggies)
Olive oil
Sesame oil
Bragg’s liquid aminos
Sea salt
Black pepper

Directions:
Warm 1 tsp of olive oil in a skillet
Cook chicken breasts for about 8 minutes on each side (or until done) and sprinkle a little sea salt and pepper on each side
Remove chicken from skillet and set aside on a cutting board
Warm 1 tsp of olive oil and 1 tsp of sesame oil in the same skillet
Add the riced cauliflower medley to the skillet and warm through for about 5 minutes
Meanwhile, cube the cooked chicken breasts
Add the cubed chicken breast to the skillet with 1 Tbsp of Bragg’s liquid aminos
Mix well and warm through
Serve!

No Bake Healthy Cookie Dough Bites

These are the bomb dot com!!!

Recently my team and I traveled to New Orleans for our annual conferences and Lindsay brought these for a snack.  You can check out her website for yummy recipes also!  Guys.  These are soooooo good!!

My 9 year old son is super picky.  He loves pastas, burgers, fries, all the stuff kids love but hardly any veggies or fruits.  It’s a constant battle.  Even though he’s not a huge fan of Shakeology, he LOVES these!  It makes me so happy to know he’s getting nutrition while eating ‘cookie dough’.

Little tip—I will say I like them best cold.  So store in the fridge or in a cooler for a road trip for the best flavor.

Ingredients:
4 scoops (or packets) of Vanilla or Vegan Vanilla Shakeology
1/2 c creamy almond butter (check to make sure there is no added sugar in the ingredients)
1/2 c agave(you might want to start with a little less than half and see if it’s sweet enough)
1/2 c chocolate chips

Directions:

Mix together (works best with your hands) then break into small pieces and roll into balls.
Place in an air tight container and store in the fridge
That’s it!!

 

Ultimate Reset – The Supplements

Each day of the Ultimate Reset you will  have to take at least two supplements.  From helping to restore your digestive tract, to alkalinizing your body, to helping your liver, all of these have very specific jobs.

The first supplement you will become familiar with is Mineralize.  Mineralize is a powdered Pink Himalayan Salt that is minimally processed.  Our tap water, and even well water, can be filled with so many additives and chemicals.  Mineralize is added to distilled water to give your body a very simple and clean water to help your body detox.

The second supplement you will get to know is Optimize.  Optimize is taken 30 minutes before each meal and is compressed into a pill.  Optimize is in the Ultimate Reset to help your body absorb nutrients and to promote health and wellness.  As we age our enzyme levels can decrease.  Stress, poor diet and environmental factors don’t help this at all.  Optimize is full of enzymes, such as amylase, lipase, bromelain and protease, which help your digestion system.  It also has camu-camu which is a great source of Vitamin C.

Around 3:00 pm on your first day you will taste your first Power Greens.  Being honest with you, this tastes awful!!  At least to me and to many others!!  But your body NEEDS this!  Power Greens is a combination of kale, spirulina, cucumber, celery, spinach and chlorella to help support your body’s acid and alkaline balance.

The majority of us have a diet of sugary treats, processed foods, Cokes and alcohol.  These, though fun, cause our bodies to work harder than they have to.  Power Greens helps to balance this out.  The best way to take this is with just a splash of cold water (like a shot worth), stir and chug.

Each night, before supper you’ll take 2 capsules of Soothe.  This is another supplement that was created to help your digestive system.  Soothe is made of organic aloe vera and curcumin.  Curcumin is very similar to tumeric and both of these promote digestive health.  Together, aloe vera and curcumin have antioxidant properties that help your body fight free radical damage.

The second week a new supplement is introduced.  Detox.  Personally, I LOVE Detox!  Like crave it, love it so much!  It’s lemony and so refreshing.  Mix it with cold water and chug.  It is a fiber drink, so make sure to drink it fast, before it clumps.  But I have found that many people do not share this same love.  Whomp whomp.  Whether you love it or you don’t, it works!

Have you ever felt bloated?  That could be a result of your colon.  Your colon does way more than expel waste.  It extracts water, potassium and some fat-soluble vitamins from solid wastes before your body eliminates them.  If your colon isn’t processing and eliminating waste properly, your body can back up, causing bloating.

This isn’t a run to the bathroom Detox!  It’s very gentle.  Coupled with milk thistle it helps to support liver function while aiding your colon to do it’s best work!

The last supplement you will take is in week three and is called Revitalize.  These capsules are filled with pro- and prebiotics for a healthy gut.  Things like antibiotics have taken away some of these friendly bacteria and we need to restore our digestive tract for healthy intestines and to help break down carbohydrates correctly.  You’ll take this three times a day the last week of your Reset.

After your Reset it’s really up to you how you want to continue.  You can quit all this goodness cold turkey or continue taking these supplements.  The first time I did this I quit taking them.  This time, I’m continuing them.  I have seen and felt how they work in my body and I want that to continue.  I’m looking so forward to feeling this great a year from now!

Ultimate Reset – Week 3

That’s a wrap folks!!

21 days and 10.4 pounds down!

I did this for a few reasons:

  1. To feel good.  I remember the first time I did this program I felt so good at the end; physically and mentally.  I needed to fell that again.
  2. My husband and I are going to Punta Cana in about a month for a trip that Beachbody is paying for.  I wanted to feel good on the beach.  😉
  3. May is our 10 year wedding anniversary.  I want to feel good in my body and feel good about the way my clothes fit.
  4. I needed to feel in control of myself.  Food and drinks can be a slippery slope for me.  I needed to hit this head on before the summer.

I’m proud to say I feel like I have accomplished all of these!

Blame it on the last week and eggs being so within reach.  Blame it on the buisiness of this time of year with vacations and sports.  But this last week was hard. I found a saving grace in guacamole and in knowing my mind was clear and sharp.  Sometimes when things get hard we have to find one thing we can own.  Mine was guacamole and how clear headed I became.  I owned that and didn’t want to lose it.

I have done the Reset to two extremes.  One was during the heart of summer.  We went on vacations, went to the beach, celebrated 4th of July and my daughter’s birthday.  We were on the go constantly.  The other, this time, was much less nomadic.  both have their perks and both have their difficulties.  

Even though the first time I did this we were on vacation the entire time, I think I’m more proud of this round.  When you’re on vacation and surrounded by people you have some build in accountability there.  This time I was working from home and no eyes were holding me accountable besides my own.  That’s a lot to carry, on top of running a business, being a mom, wife, business partner, etc.  The ownership I have with Round 2 is hard to describe.

In the end, I lost over 10 pounds, nearly as many inches and gained a huge self worth in myself, a control over food and alcohol.  This isn’t a one stop quick fix.  This is meant to give you a head start into a new life and I’m taking it to be just that.

Ultimate Reset – Week 2

It’s getting harder, y’all!

Week 2 is called the Release Phase. Your body realizes that it is being detoxed and toxins really start to leave your body. Now when I say release, don’t think this is a squatty potty kinda of cleanse. It’s not. It’s a slow and very natural cleanse and while you will pee a lot because of the water you’re drinking, that’s about all you have to worry about!

It’s not uncommon for people to become emotional on this week. The bad food habits we have are brought to the forefront and something you have to confront. Anyone can eat clean for a week. Take it into week two and it becomes harder and your habits begin to rear their ugly heads.

With that said, I felt a nice burst of energy in week 2 and really enjoyed the food! Especially the roasted red pepper sweet potato bisque!

We also had to drink a fiber drink called Detox three times a day. Some people hate
this, but I looked forward to it. It was lemony and a refreshing way to start the morning.

For breakfast each morning I had fruit and there was usually at least one salad throughout the day. My go-to right now is this hearty miso soup. It is so good!! I made a bowl for t
he hubs and even he gobbled it up. Another recipe that will be staying in our clean eating arsenal!

All in all, it was a good week. We built a deck that is calling my name…’Kris. Come drink a beer with me. Cooommmmme drink a beer.’ But I’ve stuck to my guns and just sipped water on this lovely deck.

I’m down a little over 7 pounds and looking forward to killing week 3!

Ultimate Reset – Week One

I’m a week into the Ultimate Reset and down a little oveyogar 5 pounds and my body feels clean and a lot less puffy!

I decided to do the Ultimate Reset as a countdown to our trip to Punta Cana provided to us by Beachbody.  On top of that, it’s our 10th wedding anniversary in May and I want to feel and look great.  Ultimate Reset seemed like a great way to kick off this amazing year!

What is the Ultimate Reset?

It’s a 21 day nutrition program.  I am pairing it with our 3 Week Yoga Retreat available exclusively on Beachbody on Demand and a few short runs in between, but it’s really all nutrition.

For 21 days you are given every single meal to make, when to make it, how to make it and when to eat.  This is my favorite part!  I have to think 0 about what I am going to eat!  It’s all there for me.

You begin the program eating pretty basic meals like salmon and red potatoes, salad with chicken, a rice and bean taco, scrambled eggs, etc.  But as the week wears on meat is removed and by the middle of the second week grains are removed.

You are also drinking (trying to at least!) a gallon of distilled water each day.  You are given a bottle of finely ground pink Himalayan sea salt to add to ygreensou water for electrolytes.

Before meals you will take a supplement called Optimize to help your body better break down the food and absorb the nutrients.  You also take a shot of Power Greens each day which is dried chlorophyl.  I’m not going to say this tastes awesome, because it doesn’t, but you feel so good after drinking it!  I have a nice little energy boost after drinking this.  Depend
ing on the day I will add it to my Shakeology or leave it plain.

This program is a mental battle.  100% mental.  For me that’s comforting.  I like knowing that my body simply needs to follow my mind.  And I like knowing that I am as mentally strong as I am physically.
So far I’m off to a watergreat start!  We even built a deck this past weekend which meant the beer was flowing and BBQ going.  It’s not easy, but I know it will be worth it!

Sautéed Brussel Sprouts

This is a recipe I get asked about a TON!brussel-sprouts

Brussel spouts get a bad name, but they are delicious!  Just make sure to add bacon.  😉

But seriously, the first time I tried a single sprout was a year ago and it was because I was at my mother-in-law’s and couldn’t say no.  I went all 4 year old on her and grabbed half a sprout, to smell, lick then taste.  I was blown away at how good they were!!  How could people say they were awful?  Maybe these are sprout lovers who don’t want the rest of the world to know.  Either way, I’m tearing the cap off it.  Brussel sprouts (with bacon) are DELICIOUS!  Give them a try.

Ingredients:
3-4 pieces of bacon (regular or turkey) cooked and crumbled, fat removed
1 bag of Brussel sprouts, end cut off and sprouts cut in half or chopped (totally up to you how knife happy you get)
1 Tbsp of bacon fat or olive oil

Directions:
Warm the fat or olive oil in a skillet
Add the cut sprouts into the skillet and sauté on medium heat
Stir occasionally, but let the sprouts brown
After the sprouts are brown on at least one side, add the bacon and warm through.

Serve!

Optional:  Some people like to add a little salt, some like a little sautéed red onion and some like to add balsamic vinegar.  I like mine just like how the recipe is, but feel free to make them your own!

Shrimp Stir Fry

Guys.  This recipe is sooooo good!

I came across it on the Ultimate Reset and ate it every night for supper the last 4 days while I was completing the program.  One of my favorites!!

All I really did was switch up an oil, add some onion and shrimp.  Simple and one skillet.  Win win!  And perfect for busy school nights.

Shrimp Stir Fry phonto (3)

Ingredients:
1 lb peeled and deveined shrimp
1/2 zucchini, halved and sliced
1/2 yellow onion, sliced
2 carrots, peeled and sliced
3 cups frozen broccoli
Handful of chopped mushrooms
1 Tbsp sesame oil
2 Tbsp extra virgin olive oil
2 Tbsp Bragg’s liquid aminos

Directions:
Add the oils in a large saucepan on medium heat and warm
Add the onion.  Warm through and stir until partially caramelized
Add the carrots and stir for about 4-5 minutes
Add the broccoli and stir for 3 minutes
Add the zucchini, mushrooms and shrimp and stir frequently for 4-5 minutes or until shrimp is cooked through
Remove from heat and add the Bragg’s liquid aminos.  Stir well.
Serve immediately.
Serves 2.

Lewis Boy Wings

I need to give a shoutout to my hubs for letting me use this recipe (you can find him on Instagram at back_porch_dad).  He’s a true carnivore and LOVES wings, but about 2 years ago we made the commitment to stick to the 80/20 rule of eating clean.  Wings were one of the first recipes he had to revamp and these are goooood!

And just in time for Father’s Day!

Ingredients:Lewis Boy Winds
Whole wings (drumsticks and wings attached)
Cayenne powder
Crushed red pepper
Italian seasoning or oregano
Buffalo hot sauce of choice (Tabasco brand is pure paleo, but can be hard to find.  Brands like Frank’s have minimal preservatives)
Blue cheese (optional)

Directions:
Preheat grill to high heat
Dust both sides of the winds with seasonings.  I start with the coarsest seasonings first.  This prevents the cayenne powder from blocking the crushed red pepper and Italian seasoning from sticking well.
Grill on high heat until golden brown and juices are popping. (His words!)
After the wings are seared, move them to top rack to ‘bake’.  Close the lid and check and turn periodically.  Depending on the grill, this should take as long as half an hour.
When they’re done, brush on the buffalo sauce.  Let this cook onto the skin for 3-5 minutes.  Repeat once.
Remove from grill and let cool for a few minutes.  Feel free to top with blue cheese immediately after removing them from the grill if you’d like.

Southwest Egg White Omelet

An easy peasy Southwest Egg White Omelet.

It takes about 5 minutes to throw together and is loaded with yummy goodness.

Southwest Egg White Omelet
Ingredients:
3/4 c egg whites
1 c combined chopped red bell peppers, jalapeños and spinach
1 tsp coconut oil
Salsa

Directions:
Warm coconut oil in a skillet.
Meanwhile, combine egg whites, peppers and spinach in a bowl and mix.
Add the egg mixture to the skillet and cook until the eggs are no longer runny.
Fold in half and top with salsa!
