CrockPot Ribs


ribsIngredients:
For the CrockPot

A slab of ribs (cut in half), about 5 pounds total
1 teaspoon onion powder
1 tsp oregano
1 tsp Italian seasoning
½ cup Italian dressing
¼ cup barbecue sauce
For the glaze
1/2 c barbecue sauce
5 pieces of garlic, chopped

Directions:
In a medium mixing bowl combine salt, pepper, Italian seasoning, oregano and onion powder. Mix well.
Add Italian dressing, and ¼ cup barbecue sauce, and mix again.
Add one layer of ribs to the slow cooker at a time. If you need to trim your ribs to get them to fit it’s okay. I don’t recommend cutting them when grilling them or cooking them quickly, but for this recipe it’s going to be so tender that cutting a slab in half to fit the slow cooker is okay.
Scoop a big spoonful of the sauce over that layer, then repeat with each layer. Ribs, sauce, ribs, sauce, that way each layer is covered in the sauce mixture.
Place the lid on the slow cooker and cook for about 7 to 8 hours on low. Every slow cooker is a bit different so start checking yours at the 6 hour mark and make adjustments as needed. Mine took 8 hours to become fully tender.
Remove from the slow cooker.
For the barbecue glaze before placing in the oven to finish:
Preheat oven to 400 degrees F.
Place the ribs on a baking sheet.
In a medium size bowl combine the barbecue sauce and minced garlic. Mix well.
Reserve ¼ cup of the sauce for when the ribs come out of the oven. Take the remaining sauce mixture and brush generously over the ribs, make sure to coat the tops and sides.
Place the pan in the oven on the middle rack and cook in preheated 400 degree F oven for about 8 to 10 minutes. You want the sauce to just start to bubble and the edges of the ribs to brown slightly. It doesn’t take long at all.
Remove from the oven and pour the remaining sauce on while the ribs are hot.
Place on a platter whole, or cut into smaller pieces if desired.
Eat!

Crockpot Pork Tenderloin

This is a fall and winter favorite in our house!  And I love it because it will feed us for at least 2 meals or make great lunches for the rest of the week.  Low maintenance,  baby!

My mother in law made this for the first time at a family reunion and I feel in love with it.  I think it’s the pico.  😉  Either way, it’s a great recipe to keep on hand.

Ingredients:img_5356-1
Pork loin (duh) about 2 ½ – 3 pounds, fat trimmed
8 oz pico de gallo
1 tsp garlic powder
¼ tsp dried thyme
¼ tsp pepper
¼ tsp sea salt
1 c water
1 onion, quartered
8 red potatoes, halved
Small bag of carrots

Directions:
Season pork loin with sea salt and black pepper
Pour cup of water in the bottom of the crockpot
Place pork loin in the crockpot and cover with remaining ingredients
Cook on low for 8 – 9 hours

Save leftovers for stuffed baked potatoes/salad

Margherita Pizza

This is a great quick supper that can also be saved for lunch.

In this recipe I do have options for both refrigerated pizza crust and tortillas.  I prefer whole wheat tortillas, homemade pizza crust or a paleo crust, but you can use whichever you’d like.  Just don’t eat it all in one sitting!

Margherita Pizza

Servings: 4 (Save leftovers for lunches)

Ingredients:
1 large tomato, seeded and diced
1 c grated mozzarella cheese
½ c fresh basil, chopped
1 Tbsp. olive oil
1 Tbsp. balsamic vinegar
2 garlic cloves
Refrigerated pizza dough or whole wheat tortillas

Directions:
Preheat oven to 400F
Combine tomato, mozzarella, basil, oil, vinegar and garlic in a medium bowl. Let stand for 10 minutes.
Meanwhile, unroll the dough or get out the tortillas. Transfer to a non stick baking sheet and top with tomato mixture.
Bake pizza about 8-10 minutes or until cheese is melted and dough is cooked through.
Serve.

Top with red pepper (optional)  I also like to add red onions, mushrooms and olives to mine.  Feel free to add those veggies!

Side suggestion: House salad

Yummy Shrimp Tacos

Tacos are my jam.  Seriously, if it can be put into a tortilla (and really, what can’t?!) it’s right at the top of my favorite meals list.  This is at the top for 2 reasons.  One.  My whole family ate it.  Two.  It took about 15 minutes from start to finish to make.  Win win!

Ingredients:Shrimp Tacos
1 lb. shrimp.  Shell off and deveined.
1/2 c Greek yogurt.  I like Fage.
1/4 c water
1/4 c olive oil
Good handful of cilantro
3 garlic cloves
1 tsp salt
2 limes
1 tsp cumin
1 tsp chili powder
Avocado (sliced)
Cabbage (chopped)

Directions:
Combine water, oil, cilantro, garlic, salt and juice from 2 limes in a food processor or blender.  Blend until smooth.
Add the yogurt and blend again.
Set aside.
In a bowl, combine shrimp with cumin and chili powder.  Mix well.
Warm a tsp of olive oil in a skillet and add shrimp.
Saute until shrimp are cooked through.
In a corn tortilla, add shrimp, avocado, cabbage and the creamy lime dressing you just made.

Enjoy!

Prosciutto Wrapped Chicken Thighs

This is way more of a meal for my husband than me.Chicken Thigh Done
I like white meat, he likes dark.
Cured meats aren’t really my thing, he makes meals out of them.
Hence prosciutto wrapped chicken thighs.
They really are very yummy and the crispy prosciutto rocks my socks off.  Soooo good!  And 21 Day Fix approved!

Ingredients:
8 boneless, skinless chicken thighs
8 pieces of prosciutto
Rosemary
3 cloves of garlic, thinly sliced
1/4 c olive oil
Sea salt
Pepper

Directions:Chicken Thighs Prep
Warm oven to 350 F
In a pie dish, mix olive oil and sliced garlic.
Take one sprig of rosemary and strip it, then coarsely chop the rosemary.  Add this to the olive oil and mix well.
Cut the remaining rosemary into 8 sprigs
Take one chicken thigh and spread it flat.
Sprinkle with sea salt and pepper.
Drudge the thigh through the olive oil mixture.  Do this with both sides.
Then place a sprig of rosemary in the middle and fold the thigh over.
Wrap the thigh in a piece of prosciutto and secure with a toothpick.
Place the thigh on a cooling rack and place the cooling rack on a baking sheet.
Continue with the remaining thighs.
If you have remaining olive oil, drizzle over the thighs.
Bake at 350 for about 40 minutes.

Serve.

The Master’s Hammer & Chisel (Week One)

I bought this gem of a program in December, with plans to start the program in January.

See how happy I am?!  It was also the first day of our remodel, so I had been moving furniture and emptying out closets all day.  Not fun.  But getting this made my day!

I’ve been waiting for a new program that combines weightlifting with cardio and that will challenge me.  I knew this was going to be it!  The Master’s Hammer & Chisel.

My plan was to do what I have always done in the past.

Set my alarm clock.
Push snooze about twice.
Crawl out of bed.
Sneak around in the dark and try to get dressed.
Be as quiet as I can be without waking Ben.
Workout.
Post my accountability picture and let me group know I got it done.
Then get the day going.

But, then I received this for Christmas.

Seriously THE BEST Christmas present EVER!  The.  Best.

Being honest, I had plans to drink wine with the program.  I was going to limit it, but certainly still partake.  There was no way I was not missing this opportunity, though.  I have wanted him (the hubs) to do a program with me for about 2 years.  And now I have it writing!

So we did what everyone does before buckling down for 60 days.

We ate Mexican food.
Had a margarita.
Then had another.

And on January 4th it started.
We meal planned.
We stocked up on Shakeology.
And we worked out.

Is getting up at 5:30 easy?  It’s easier with him.
Is working out early in the morning easy?  It’s easier with him.
Is eating healthy easy?  It’s easier with him.
Is not drinking easy?  It’s easier with him.

This program isn’t designed to be easy.  It’s designed to push you and to allow yourself to break through self imposed limits.  Why would you want a program that does anything less?

On day 1 we were excited.

The first workout was called Chisel Balance.  It’s hosted by Autumn and you use weights while balancing.   It sounds easy, but I promise it is not!  Between almost 3 minutes of pistol squats at the end and weak ankles, it was tough.  But we got it done.  After a quick Shakeology, day 1 was in the books.

Day 2 was Hammer Plyometrics.  It was short and that’s about the only good thing that came from that workout.  Imagine 25 minutes of jumping, with weights.

But just as we did on Day 1, we got it done.

Day 3 was Iso Chisel Strength.

Autumn (Chisel) hosted this workout again and Ben’s first words were ‘she’s doing this one’?  It wasn’t meant bad at all, it was an honest question.  Seeing as we have the Beast, you would imagine he would host the first strength workout, but Autumn did what she does and kicked our butts!

By the end Ben was using 5 pound weights and I grabbed some beer bottles from the fridge.

Day 4 was a rest day, which we gladly took.

Day 5 was Iso Speed Hammer, hosted by Sagi.  Lots of holds!

At the end he asked us to take a picture with our guns.  Ben took it a little differently than I did…

Day 6 was Chisel Endurance.

Day 7 was Total Body Hammer and 10 Minute Abs.

We stayed on point with our nutrition.

Which led to Ben loosing 6 pounds his first week, while I lost 3.

I cannot say enough about this program!  It is just what we needed, especially after the holidays.
