Tacos are my jam. Seriously, if it can be put into a tortilla (and really, what can’t?!) it’s right at the top of my favorite meals list. This is at the top for 2 reasons. One. My whole family ate it. Two. It took about 15 minutes from start to finish to make. Win win!
1 lb. shrimp. Shell off and deveined.
1/2 c Greek yogurt. I like Fage.
1/4 c water
1/4 c olive oil
Good handful of cilantro
3 garlic cloves
1 tsp salt
1 tsp cumin
1 tsp chili powder
Combine water, oil, cilantro, garlic, salt and juice from 2 limes in a food processor or blender. Blend until smooth.
Add the yogurt and blend again.
In a bowl, combine shrimp with cumin and chili powder. Mix well.
Warm a tsp of olive oil in a skillet and add shrimp.
Saute until shrimp are cooked through.
In a corn tortilla, add shrimp, avocado, cabbage and the creamy lime dressing you just made.
