It’s easy to fix and it’s always nice to have something easy to warm up when you’re munchy.
This soup is all in one pot and is absolutely painless. Another perk… you will not need any spices with this recipe. There are tons of natural spices hidden in the ingredients which makes it even more awesome!
1 tsp extra virgin olive oil
1/2 yellow onion, chopped
1 bell pepper, seeded and chopped
3 sticks of celery, chopped
1 jalapeño, halved and chopped (I leave seeds in)
2 cloves of garlic, chopped
6 cups of chicken stock
1 (14.5) can fire roasted diced tomatoes
2 boneless, skinless chicken breasts
1 lime, juiced
1/2 tsp sea salt and ground black pepper
cilantro leaves, chopped
1 avocado, pitted and sliced
Warm extra virgin olive oil in a large pot
Add onion, celery and bell pepper and sauté for about 5 minutes.
Then add the garlic and jalapeños. Sauté for an additional 3 minutes.
Add the diced tomatoes and chicken stock.
Bring to a boil, then reduce to low.
Add the 2 raw chicken breasts. Cover and cook for about 20-25 minutes.
Once the chicken is cooked, remove it from the pot and let cool.
Shred the chicken and add back to the pot.
Add the lime juice and chopped cilantro.
Serve and top with avocado and/or tortilla strips.
