Paleo Chocolate Chip Cookies

These have been a loooong time in the making.

When I originally set out to make paleo chocolate chip cookies I was playing with recipes that had eggs.  But I have so many nursing mom friends that can’t eat eggs because of their baby’s allergies, I wanted to rule out eggs also.

This recipe is super simple and super easy.  The way life should be.

I give you kid approved Paleo Chocolate Chip Cookies:

Ingredients:chocolate chip cookies
1 1/4 c ground almond flour/meal
1/4 c raw honey
1/3 c dark chocolate chips
2 heaping Tbsp. melted coconut oil
1/4 tsp baking soda
1/4 tsp sea salt
2 tsp water

Directions:
Preheat oven to 325 and grease a baking sheet with butter (preferably Kerrygold or other grass-fed butter)
Mix all ingredients into a large bowl
Roll one teaspoon of batter into a ball and place on baking sheet
(Should make 11-12 cookies)
Bake about 12 minutes
Cool and enjoy

Beachbody On Demand is perfect for people who travel a lot. It’s perfect for those that never finish a program and bounce around from program to program. I have customers that switch from 21 Day Fix, Insanity, to P90 regularly. NOT ME!  I’m a little OCD and must start and finish a workout program. There is something about marking off each workout on the calendar that gives me a feeling of accomplishment. I do however get annoyed with keeping up with the DVDs.  Beachbody on demand is a great opportunity to try out all different types of workouts before committing to just one.

How do you get your hands on this?
Beachbody On Demand is now available to every Team Beachbody Customer that has the club membership.  The club membership is our all access pass to amazing tools to help you on your journey.  The website gives you meal planners, recipes, fitness tips and tools to help you start and complete an entire program. You get the club membership by contacting your current Beachbody coach and asking how you can upgrade to the club or you can contact me if you do not have a coach and I can walk you through the steps to get the club membership.

How much does it cost?
The club membership is $2.99 a week but it is billed quarterly at $38.87.  You can cancel or change it at any time.  You are not locked into the club for a specific period of time.  No contract! There is no additional cost to stream any of the workouts. They are all yours!  When you get the club membership you instantly have access to the customized meal planning tool and a grocery list. You can modify the meal plan to your lifestyle.  The BEST part…..you get me as your COACH to help keep you accountable. I’ll get you added to my accountability group on Facebook so you can connect with others on their journey, help you set goals and provide daily motivation. Tacos

Yep.  Just regular ole’ tacos.Taco Seasoning

I never read the labels on spice packets, like taco seasonings and guacamole mixes.  I just figured they were spices, packaged conveniently so busy moms like myself could save one step at night.  (Saving even one step on a busy night is huge!)

It wasn’t until speaking with my sister-in-law that I realized there is SO much more in those little packets.

Like dairy in the guacamole packet, at least the one I used to use.

Her (then) newborn, my sweet little nephew, has an allergy to dairy.  I told my sister-in-law (Allison) that I would bring guacamole to a family dinner.  It was then that my eyes were opened to packaged seasonings.  Allison told me that she would love to eat guacamole, but that so often guacamole has dairy as an ingredient.  I went to the store the same day and could not believe that the little spice packet I assumed was simple dried ingredients did actually contain dairy, as well as many other ingredients.

This ended my seasoning packet buying.

But no harm done, because in the process I have learned how to make my own.  With my own ingredients and my own measurements.

I give you taco seasoning!  (And I absolutely learned to make home-grown guac as well!)

Ingredients:Spices
1/4 yellow onion (chopped fine)
2 garlic cloves (chopped fine)
1 Tbsp chili powder
1.5 tsp. ground cumin
1 tsp olive oil
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp oregano
1 lb preferred lean meat (chicken, beef, turkey)
1/2 c water

Directions:
Warm olive oil in skillet over medium heat and saute the chopped onion and garlic for about 5-7 minutes.
Add the meat and brown.
Then add all the spices and water.
Let simmer for 5 minutes and serve.
Easy peasy!

Serves a family of 4
